Banana Pancakes are a sweet Saturday morning indulgence that I guarantee your whole family will love! This week I wanted to share another easy dish and I think this banana pancake recipe will surprise you! It takes me less than 30 minutes start to finish to get this delicious, decadent breakfast on the table. Give it a try this weekend! The only caveat is that you may need a nap after filling up on these bad boys.

We eat a lot of bananas in our house. They are an easy snack and they go great in smoothies. But, all week long I find myself praying that there will be one or two bananas left on Saturday morning.
Side note: I’ll never understand someone who loves green bananas. That $%#@ is BANANAS. I say, the browner the better, and for this recipe, you definitely want to use brown/spotted bananas for sweetness.
Saturdays are for Banana Pancakes
I love making a big breakfast on the weekend. Banana pancakes on Saturday mornings bring back a lot of great memories from my childhood. My mom always had the griddle going well before all the kids got out of bed. Hands down, the sweetest wake up call is the smell of pancakes and bacon filling the air. Am I right?
I do love using my electric griddle for these banana pancakes, just like mom. There’s a huge surface area to work with and you can cook several pancakes at once. But, the clean up is so much easier with a skillet. So I’ll let you be the judge.
Apparently Mom had a lot of rules because she alway said “chocolate chips are only for special occasions”. Well, I’m a grown woman and in my kitchen, chocolate chips are for Saturdays. Period.

Ingredients
- 1 ½ cups all purpose flour
- 1 teaspoon baking soda
- 2 tablespoons light brown sugar
- ½ cup semi-sweet chocolate chips
- 2 ripe bananas (mashed)
- ½ teaspoon vanilla
- 2 tablespoons butter (melted)
- 1 cup milk
- 1 egg
Instructions
- 1. In a large mixing bowl, combine wet ingredients including mashed bananas, brown sugar, vanilla, butter, milk and the egg. Stir until fully combined.
- 2. In a separate bowl, combine flour and baking soda.
- 3. Add half of the dry flour mixture to the wet ingredients. Stir until fully combined. Repeat with remaining flour.
- 4. Grease a large skillet or griddle with cooking spray. Turn to medium heat (350 degrees).
- 5. Using a medium ice cream scoop (approximately 4 tablespoons), spoon the batter onto the preheated skillet or griddle.
- 6. Sprinkle a small handful of chocolate chips onto each pancake.
- 7. Cook until small bubbles appear (60 to 90 seconds) then flip using a spatula. Cook until the bottom is golden brown and remove from heat.
- 8. Serve with sliced bananas, additional chocolate chips and maple syrup.
