Drum roll, please… Today I am sharing the recipe for the long awaited, insta-famous, flavor packed Southwest Breakfast Skillet! Okay, maybe 156 likes isn’t insta-famous but who gives a &*%$? It’s delicious.
Deep Food Thoughts
If you were stranded on a deserted island and could only eat one food for the rest of your life, what would it be? My fiancé, Austin, and I have this discussion all the time and I usually falter between Italian and Mexican food. We eat tacos once a week and honestly, I think I could do it every day. I mean, who doesn’t love Mexican food? That’s why, when I saw these Simply Potatoes Southwest Hash Browns at the grocery store, I just had to get them.
The Perfect Breakfast Hack
These hash browns are a great time saver because they come with classic Southwest seasonings built right in. I use Simply Potatoes because that’s the only brand that carries this flavor and they’re delicious TBH. I’m definitely not getting paid to write about this. I am all about breakfast hacks, especially on Sunday mornings. This breakfast skillet is everything you need for a hearty, flavorful breakfast packaged up in a little slice of golden potato and egg yolk heaven. Besides, runny yolks are a totally in right now so this breakfast is super trendy and insta-worthy AF.
What I love the most about this breakfast skillet is that it is so colorful! You can really top this with any veggies or toppings you choose. I personally love sliced avocado [who doesn’t], tomato and red onion. I also serve this with salsa and Greek yogurt. We use plain Greek yogurt instead of sour cream at our house. It took a little while to get used to but now I don’t even miss it! We have to cut calories where we can 😉

Southwest Breakfast Skillet
Ingredients
- 3 tablespoons vegetable oil
- 10-ounce package of Southwest Hash Browns
- ½ cup chopped yellow onion
- ¼ teaspoon of salt
- ¼ cup shredded Mexican blend cheese
- 1 vine ripened tomato (cut into wedges)
- 1 avocado (sliced)
- 2 tablespoons finely diced red onion
- 2 tablespoons roughly chopped cilantro
- ¼ teaspoon paprika
Instructions
- 1. On medium heat, heat two tablespoons of vegetable oil in a large non-stick skillet.
- 2. Add yellow onion and sauté until translucent.
- 3. Add remaining tablespoon of vegetable oil, hash browns and salt to skillet. Stir to combine.
- 4. Spread hash browns evenly in the skillet and press down lightly with a spatula. Cook 6-7 minutes or until the bottom starts turning golden brown. Flip potatoes. Cook for an additional 5 minutes.
- 5. Turn heat to low. Create four “wells” in the hash browns and carefully crack one egg into each well.
- 6. Cover skillet. Cook on low for 5-7 minutes or until the eggs are cooked to your liking.
- 7. Remove skillet from heat. Sprinkle cheese on the hash browns around the eggs. Sprinkle paprika for color.
- 8. Top with sliced avocado, tomatoes, red onion and cilantro.
- 9. Use spatula to slice the hash browns and serve like a pizza. Enjoy with your favorite taco accompaniments like sour cream, salsa or hot sauce.
