5 Minute Pumpkin Hummus
5 Minute Pumpkin Hummus – homemade pumpkin hummus takes minutes to prepare and even less time for your guests to gobble it all up! This healthy fall snack is the perfect appetizer for Thanksgiving supper!
Thanksgiving is right around the corner and I’ve got a one way ticket to casserole city, baby! If you don’t already know this about me, I was born and raised into a family of great cooks who take food holidays pretty darn seriously. The holidays are a time to give thanks and spend meaningful time with family. The Bridges Family does that through food. All year I have sweet dreams of rows and rows of classic comfort dishes like cornbread stuffing, macaroni & cheese and collard greens – think of a country style buffet on steroids. But while we all agree that supper is the main event, you can’t forget about the appetizers! Over the next couple of posts, I am going to share my favorite holiday appetizers to please grazing guests!
Make-ahead Appetizers are a Hostess’s Best Friend
When you have potatoes on the stove, turkey in the fryer and pies in the oven, the last thing you want to worry about is making appetizers for your guests. That’s why, I love the idea of setting out cheese and fruit plates or other cold snacks you can prepare ahead of time. I created this recipe for pumpkin hummus because my family loves pita and hummus and because pumpkin is all the rage. Obvi.
Preparing Pumpkin Hummus
This Pumpkin Hummus is the ultimate trifecta: it’s quick, it’s yummy and you probably have most of the ingredients already on hand. In a food processor, simply combine chickpeas, tahini, pumpkin, salt and honey until smooth. The honey won’t make the hummus sweet, it just offsets some of the bitterness of the pumpkin and tahini. Give the hummus a taste, you may need to blend in more salt or honey depending on your personal preferences. Scoop pumpkin hummus into a container with a tight fitting lid and refrigerate until guests arrive. When ready to serve, drizzle olive oil over the top and garnish with paprika and toasted pumpkin seeds. Serve with pita chips and raw vegetables.
