4 Ingredient Sausage Stuffed Mushrooms – these sausage stuffed mushrooms are perfect hand-held appetizers for holiday cocktail parties and only require 4 ingredients!
Mushrooms are a polarizing fungi; either people love them or despise them. My fiancé told me that he once ordered an entire pizza topped with mushrooms so his buddies wouldn’t steal a slice. And they didn’t. Drastic times call for drastic measures, I guess. 😉 I am not going to pretend that I can convert a staunch mushroom hater… but if you’re down with shrooms, this recipe is a game changer.
Sausage Stuffed Mushrooms are perfect for holiday parties because they are hearty, flavorful and a great passed appetizer.
I have to say, my favorite part of this appetizer is the sausage stuffing. I use Jimmy Dean Spicy Pork Sausage and Garlic and Fine Herb Boursin Cheese. This pairing really packs a punch! Simply brown the sausage, stir in these cheese until melted and sprinkle in breadcrumbs. You can use the stuffing in this recipe for any size mushroom but I recommend medium sized Portabellas. They’re the perfect two bite starter (one bite for aforementioned fiancé). Not to mention, they lay flat so you don’t have to worry about them rolling away.
To clean the mushrooms, simply twist off the stem or use a paring knife to remove. You don’t want to rinse the mushrooms because they will act as a sponge and soak up too much water. Instead, use a damp paper towel to wipe off any dirt from the mushroom caps. Once the mushrooms have been cleaned, I recommend baking them at 350 degrees for at least 10 minutes BEFORE stuffing to remove some of the moisture. After the ten minutes, you should pour off any excess liquid before filling them with the stuffing. Then, after stuffing each mushroom, return them to the oven to bake for an additional 20 minutes.

Ingredients
- 18 medium portabella mushrooms
- 1 pound ground pork sausage (I used Jimmy Dean Spicy Pork Sausage)
- 1 - 5 ounce package of Gournay Cheese (I used Boursin Garlic and Fine Herb)
- ¼ cup dry bread crumbs
Instructions
- 1. Preheat oven to 350 degrees and lightly grease standard baking sheet.
- 2. Clean mushrooms by removing the stem with a paring knife. Wipe down each mushroom cap with a damp paper towel.
- 3. Place mushroom caps top down on baking sheet. Place baking sheet in preheated oven and bake for 10 minutes.
- 4. Meanwhile, brown sausage in a medium sized skillet over medium heat. Once fully cooked, add cheese and stir until melted and fully combined. Remove skillet from heat and stir in bread crumbs.
- 5. Remove mushrooms from the oven. Using a set of small tongs, carefully pour off any liquid that has accumulated in the mushroom caps. Return mushrooms to baking sheet.
- 6. Using a medium sized scoop, fill each mushroom cap with the sausage filling.
- 7. Return baking sheet to oven and bake for an additional 20 minutes.
- 8. Garnish with fresh chopped parsley or Italian seasoning.
- 9. Enjoy!
