Southern Corn Casserole
Southern Corn Casserole is so easy, budget-friendly and only requires 6 ingredients! It doesn’t matter if you’re serving Mexican, barbecue or comfort food – this is the perfect side dish!
Life Update: We are officially in our new home and loving every bit of it! We have been hanging fans, installing closet organizers and purging the garage. My new all-white kicthen is like a dream come true considering we spent the last two years in a shoe box. I haven’t had MUCH time to break it in but when I have, I’ve been cooking simple recipes that make a lot of food; leftovers are so clutch when you’re busy with DIY projects.
Where I’m from, Sunday supper and casseroles are pretty much synonymous. There’s something about spooning a big heap of warm southern comfort food that fills your belly and your heart. After working our tails off, we needed a lil’ southern comfort. That why, last weekend, I made my favorite southern side dish: corn casserole. Like any other casserole, this recipe makes enough to feed a small army so we had plenty for leftovers. We’ve eaten this with pork, chicken and even tacos. Somehow we aren’t sick of it yet 😉
This recipe is super easy because everything gets mixed together, poured into a casserole dish, thrown in the oven and baked to delicious golden perfection. I make this recipe with two boxes of Jiffy brand corn muffin mix but you can use any brand you like. Just be sure the box is between 15-17 ounces or your proportions will be a little off.
Option for a Mexican Twist
Please tell me you remember the old Mexican restaurant chain called Don Pablos? They used to serve the best corn casserole. If you want to serve this with Mexican food, substitute the cheddar cheese with Montery Jack and add a diced jalapeno pepper to the batter. Serve it with these Chicken Verde Enchiladas for a complete meal.

Ingredients
- 2 - 8.5 ounce boxes corn bread mix (I use Jiffy Corn Muffin Mix but you can use any brand)
- 15 ounce can corn (discard excess liquid)
- 15 ounce can cream corn
- 2 eggs
- 8 ounces sour cream
- 1 cup grated cheddar cheese
Instructions
- 1. Preheat oven to 350 and grease 13x9 casserole dish with cooking spray.
- 2. In a large bowl, stir together corn bread mix, cream corn, corn, eggs and sour cream until well combined.
- 3. Fold in cheese.
- 4. Pour batter into casserole dish and smooth out the top.
- 5. Bake uncovered for 35 minutes or until toothpick comes out clean.
- 6. Serve immediately & enjoy!
