These easy ideas for breakfast freezer meals are perfect for new moms. When you need a quick breakfast reach into your freezer stash and heat them up within seconds.
If you’re a follower, you know that we are expecting our first baby girl within the next week or so. I have been doing everything possible to prepare myself for postpartum including meal prep. As a big breakfast fan, I came up with a few simple ideas to make my morning meal a little easier.. especially with baby in tow. Here are a few of my simple ideas to fill your freezer with yummy breakfast options.
5 Easy Breakfast Freezer Meals
1. Make-Ahead Veggie Egg Muffins
This is actually a recipe I posted a couple years ago when egg muffins were all the rage. They’re still a favorite of mine because you can throw in whatever leftover veggies you have in the fridge. To prepare for baby, I loaded mine with healthy greens (spinach and kale) and mushrooms. In order to freeze the muffins, allow them to cool completely, then add to a gallon size freezer bag and freeze flat. Then, to reheat, simply place one or two on a microwave safe plate and microwave for 60-90 seconds until heated through.
2. Blueberry Muffins
Okay, this is a super easy one. You can bake a box of blueberry muffins (use any flavor or recipe you like), allow them to cool, wrap them individually in plastic wrap, place them in a gallon freezer bag and freeze them flat. To reheat, allow them to thaw in the fridge overnight and microwave for 30-60 seconds.
3. Make Ahead Smoothie Packs
My husband loves to freeze individual bags of frozen fruit (blueberries, strawberries, bananas) for smoothies. It’s actually a great hack for when you have produce that is just a day or two from going bad. In the morning, Austin will add the frozen fruit to our bullet blender with yogurt, protein powder and either milk or juice. 4. Miniature Pancake Stacks
Similar to the muffin idea, use your favorite pancake recipe (or a box mix) and double the recipe. Follow the recipe instructions but in order to make them “miniature”, only add 2-3 tablespoons of batter for each pancake. Once the pancakes are cooked, allow them to cool completely. Freeze in gallon size freezer bag in stacks of 3-4 pancakes (depends on how many you typically eat). To reheat, place a stack on a microwave safe plate and microwave for 20 seconds per pancake. Top with butter and syrup for a warm comfort food breakfast.
