Hello there, friends. It’s been quite a while since I posted a recipe. I’ve been a little busy with our new baby girl!
She just turned four months old and we have gotten into a pretty good rhythm. But, I head back to work in just a few weeks and I know I’m going to be pressed for time in the mornings.
One of many things I’ve learned over the last several months of being a new mom is the importance of having easy, quick, nutritious meals on hand. That’s why I look for make-ahead recipes like this chewy chocolate chip baked oatmeal (see here for other make-ahead breakfast ideas).
Old fashion oats and flax seed are packed with fiber and antioxidants. They give you the sustained energy you need to tackle the day. Personally, I think this oatmeal is way better than the instant packets. It has more texture, better ingredients and frankly it just tastes better. Make up a batch, cut it into squares, put it in the fridge and it’ll last you all week.
Easy Substitutions
Gluten-free: I like the flour in this oatmeal bake because it gives it that cookie taste and texture. However if you’d like to make a gluten-free version, just replace the half cup of flour with an even half a cup of oats.
Quick-oats: You can use quick oats instead of old-fashioned oats. Use a 1-to-1 ratio. The difference between the two is that quick oats are cut before they’re rolled. This means that they will absorb liquid faster than the whole oats. This will change the chewy texture a bit.
Mix-ins: if chocolate chips aren’t your style, you can mix in 1/2 cup blueberries, diced strawberries, mashed banana, etc. The recipe is versatile!

Chewy Chocolate Chip Baked Oatmeal is a delicious, make-ahead breakfast that is packed with healthy ingredients. A great way to start the day!
Ingredients
- 2 1/2 cups old fashioned oats
- 1/2 cup all purpose flour
- 1/4 cup flaxseed (optional)
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 2 eggs
- 2 cups milk
- 1/4 cup melted butter
- 1 teaspoon vanilla
- 1/2 cup brown sugar
- 1/4 cup maple syrup
- 1/2 cup chocolate chips
Instructions
- 1. Preheat oven to 350 degrees and grease 9x13 baking dish.
- 2. In a large bowl, mix together dry ingredients including oats, flour, flax seed, baking powder and salt.
- 3. In a separate bowl, whisk together wet ingredients including eggs, milk, butter, vanilla, brown sugar and syrup.
- 4. Add dry ingredients into wet mixture and stir to combine.
- 5. Fold in chocolate chips.
- 6. Pour evenly into baking dish and bake for 30 minutes.
- 7. Top with powdered sugar, fruit or syrup. Enjoy!
- 8. Store oatmeal in the fridge for up to one week. To reheat, place a square on a microwave safe plate and heat in the microwave for about 60 seconds.
