Seasonal Pear Walnut Salad
Seasonal Pear Walnut Salad is perfect for any holiday or special occasion. Spring mix is topped with pear, walnuts, Gorgonzola, and pomegranate seeds. Drizzle on the honey dijon vinaigrette for a sweet and tangy bite.
The holidays don’t usually have me thinking “salad” but this recipe changed my mind. I’m getting Christmas tree vibes complete with bright spring greens and pomegranate jewels. A salad this beautiful should be rightfully displayed front and center in a trifle dish.
Pear Walnut Salad with honey dijon vinaigrette dressing only takes about 10 minutes to prepare and there is no cooking involved. Start by slicing the fruit and chopping walnuts. Now that the hard part is over, it’s all about assembly. In a clear trifle bowl, layer spring mix, pear, plum, pomegranate seeds and walnuts. Repeat 3 times and top with crumbled Gorgonzola cheese.
For the vinaigrette dressing, mince a small shallot then add olive oil, white wine vinegar, dijon mustard, honey, salt and pepper. Drizzle over the salad when it’s time to serve. Toss and enjoy!
The recipe serves 6 people as a side dish. If you’re making it a meal, it will likely serve 3 people. Add chicken for a well-rounded entrée.
