Homemade Granola Yogurt Parfait
Homemade Granola makes the perfect yogurt parfait for a healthy breakfast. Oats, pecans, almonds and honey make this granola recipe nutty and sweet!
The smell of homemade granola baking is right up there with freshly baked cookies. It’s a instant mood lifter and makes the whole house feel cozier. It also tastes way better than the store bought stuff.
My granola philosophy is to keep it simple. I like oats, mixed nuts, honey, and a pinch of cinnamon. I toss in whatever nuts I have in the pantry. In this case I used pecans and sliced almonds. Once the oats and nuts have cooled, feel free to add your favorite mix-ins like chocolate chips and/or dried fruit.
This recipe makes “loose” granola; not too sweet or crunchy. It’s absolutely perfect for layering in yogurt parfaits, snacking or even topping salads. My favorite way to eat it is layered with Greek yogurt, honey and mixed berries.
Here’s what you need for the perfect yogurt parfait:
- Homemade granola (recipe below)
- Greek yogurt mixed with honey and a splash of vanilla extract
- Diced strawberries
- Fresh blueberries
