Shaved Brussels Sprouts with Bacon is the best way to cook brussels on a weeknight. This recipe is so simple and much faster than roasting!
My husband and I love roasted Brussels sprouts. They are nutty, crunchy and delicious. But on a weeknight, I am always rushed to get dinner on the table. That’s why this shaved brussels sprouts recipe is a MUST for busy moms like me… or anyone for that matter.
Just five ingredients create a smoky, tangy bite that pairs perfectly with poultry, pork or beef. Here’s what you need:
- Brussels sprouts
- Bacon
- Red onion
- Salt & Pepper
- White Wine Vinegar
The easiest way to shave brussels sprouts
Hand sliced Brussel sprouts are the best way to create perfectly shaved greens. But in order to make this dish in under 20 minutes, I recommend the food processor as a shortcut. The key is to shred in two batches, gently pulsing 8-10 times. You want small pieces like the image below so be careful not to overdo it.

Shaved Brussels Sprouts with Bacon
Ingredients
- 1 pound brussels sprouts
- 5 slices of bacon (cut into ½ inch pieces)
- ½ cup of red onion (julienned)
- ½-teaspoon salt
- ¼-teaspoon pepper
- 2 tablespoons white wine vinegar
Instructions
- 1. Add half of the brussels sprouts to food processor and pulse 8-10 times to shred. Picture in blog post above for example. Repeat with remaining sprouts.
- 2. In a skillet or non-stick pan, cook bacon pieces until brown and crispy.
- 3. Add shredded brussels sprouts, onion and salt & pepper to pan. Sauté for 4-5 minutes or until slightly tender.
- 4. Pour in vinegar and stir for one minute. Once vinegar has absorbed, taste the dish. Season as necessary.
- 5. Serve immediately and enjoy!
