Chocolatey Peanut Butter Cookie Bars are a no-fail cake mix cookie recipe. These gooey cookie bars come together in a snap and are the perfect dessert for any occasion.
My two favorite ingredients, chocolate and peanut butter, unite in this oh-so-rich dessert! You’re going to want to pour yourself a glass of milk for this one… or maybe a scoop of ice cream 🙂
Have you ever spent hours on a cookie recipe only to have them spread in the oven and come out looking like little frizbees? To be honest, I’ve been known to use a pre-made cookie dough just to avoid the stress and heartache of ruining a perfectly good batch of homemade chocolate chip cookies. Well, not anymore! Today, I am sharing a simple cookie bar recipe that will make your heart and your belly very happy!
Sure, you could make cookie bars from scratch but I’m all about a good shortcut. That’s why, I use a box cake mix. You’re telling me a company literally puts together all the ingredients you need in a convenient little box? Pssssh. I take a small win wherever I can get one.
The best part is, there’s no need to let the dough rest in the fridge. You simply mix, press into an 8×8 baking pan and pop it in the oven. Once the cookies have cooled completely, you can drizzle a little extra chocolate over the top (you know, in case these bars aren’t chocolatey enough already).
We are really taking cookies up a notch.

Chocolatey Peanut Butter Cookie Bars
Ingredients
- 1 box vanilla cake mix
- 5 tablespoons butter (softened)
- 2 eggs
- 1 cup creamy peanut butter
- 1 cup miniature chocolate chips
- 1 teaspoon coconut oil
Instructions
- 1. Preheat oven to 350 degrees.
- 2. Place a sheet of parchment into the bottom of an 8x8 baking pan. Lightly grease with cooking spray.
- 3. In a large bowl, use a rubber spatula to combine cake mix, butter and eggs. Then, stir in peanut butter until no streaks remain and dough is well combined.
- 4. Fold in 2/3 cup chocolate chips.
- 5. Pour dough into prepared baking pan. Use rubber spatula to press the dough evenly into the pan.
- 6. Bake for 25 minutes.
- 7. Remove from oven and allow cookie bars to cool in the pan for about 20 minutes. Then, transfer to a wire rack to cool completely.
- 8. Once cooled, cut bars into 12 squares.
- 9. For the chocolate drizzle, start by adding the remaining 1/3 cup chocolate chips to a small microwave safe bowl. Microwave for 1 minute, stir, then microwave again for 30 seconds. Do this until chocolate is completely melted. Stir in coconut oil. (chocolate should easily drizzle off the end of a butter knife).
- 10. You can place the squares on a wire rack over parchment paper or directly onto the parchment paper (whatever you prefer). Use a butter knife to drizzle chocolate over cookie bars.
- 11. Allow chocolate drizzle to set and enjoy!
