Sheet Pan Low Country Boil
Sheet Pan Low Country Boil is an easy, no fuss alternative to your favorite summertime supper. Shrimp, smoked sausage, potatoes and corn are tossed in old bay and a rich garlic butter, then roasted to perfection. Enjoy this one-pan southern seafood dish with a glass of sweet iced tea!

Wow. And just like that, it’s officially summer. I can’t believe how fast this year is flying by! To honor the first day of summer, let’s talk about my two favorite warm-weather traditions: Low Country Boil and southern sweet iced tea.
Low Country Boil Made Easy
Traditional Low Country Boil is famous in the South. The dish originated in South Carolina where, apparently, people cook their entire dinner in a giant pot, turn it out onto newspaper, and create an all-you-can-eat buffet. Roll up your sleeves and dig in, people.
Traditionally, Low Country Boil contains shrimp, sausage, potatoes, corn and onions that are seasoned with Old Bay and crab boil. Everything is cooked outdoors in a giant aluminum stockpot over propane gas. Let me go on the record and say that I do agree that this dish is absolutely delish prepared in the traditional manner. However, it is a BIG PRODUCTION and I only make it this way when feeding a crowd.
For that reason, I created this alternative method using a sheet pan and it’s pretty darn tasty if I do say so myself (Austin agrees with me). The recipe is perfect for 4-5 people and can be prepared rain or shine! This is CLUTCH because it has been raining in Florida every day for a month.
The trick to this recipe is to parboil the potatoes and corn before tossing all the ingredients in an Old Bay seasoned garlic butter and roasting it all in the oven. That way, your veggies will be completely cooked through and you won’t over-do it on the shrimp. Shrimp cooks extremely fast in the oven so you have to be careful or you’ll end up with rubber prawns.

Sheet Pan Low Country Boil
Ingredients
- 1 pound small gold potatoes
- 3 ears of yellow corn, each sliced into 1.5 inch pieces
- ½ cup (1 stick) salted butter, melted
- 1 tablespoon Old Bay seasoning
- 3 large cloves of garlic, minced
- 1 pound large shrimp, deveined
- 1 (14 ounce) package of smoked sausage, sliced
- 1 yellow onion, cut into 1 inch pieces
- ¼ cup chopped Italian parsley
- 1 lemon cut into wedges
Instructions
- 1. Preheat oven to 400 degrees. Cover baking sheet with aluminum foil and spray with non-stick cooking oil.
- 2. Bring a large pot of salted water to boiling, add in potatoes and cook 8 minutes.
- 3. Add corn to boiling water and cook for an additional 5 minutes. Potatoes should be tender. Drain corn and potatoes.
- 4. Place potatoes, corn, shrimp, sausage and onion evenly onto sheet pan.
- 5. In a small bowl, combine melted butter, Old Bay seasoning and garlic. Drizzle onto sheet pan and gently toss to combine. (I use a grill brush to make sure all the protein is coated).
- 6. Place into the oven and bake for 12-15 minutes depending on the size of the shrimp. Shrimp should be opaque when done.
- 7. Remove from oven and garnish with chopped parsley.
- 8. Serve with a wedge of lemon and enjoy!
