Restaurant Style Mexican Rice
Restaurant Style Mexican Rice is spicy, fluffy and the perfect side dish for all your Mexican favorites. This fool-proof recipe is easy to follow and makes yummy rice every time!
For the longest time, whenever I made tacos or enchiladas at home, I always felt like I was missing something. There’s absolutely nothing like a hot plate of rice and beans from the Mexican restaurant down the street. You know the kind of place I’m talking about. Combo #6 is probably a Speedy Gonzalez, am I right? How DO they get it so perfectly seasoned and fluffy? Well, it’s not some well-kept secret anymore. I set out to recreate this Mexican rice and GREAT SCOTT I’ve done it!
If you’re anything like me, you buy a bag of yellow rice on Taco Tuesday and call it a day. But, I promise you, this recipe is just as easy and doesn’t require too much time and/or babysitting. First, start with sauteing white onion in olive oil (if you havent noticed, I start almost everything with onion). Add the rice and saute for a few minutes until the grains start to turn a light golden brown. Then, stir in salsa, a can of Rotel, chicken broth and salt. Bring contents to a boil. Cover, reduce heat to low and simmer for 20 minutes. Other than a quick stir half-way through, that’s it! You’ll have fluffy, flavorful rice in less than 30 minutes. Check out the full recipe below.

Restaurant Style Mexican Rice
Ingredients
- 1 tablespoon of olive oil
- 1/2 large white onion (finely diced)
- 2 cups long grain white rice
- 10 ounce can of Rotel diced tomatoes and green chilies
- 3 1/2 cups of classic chicken broth
- 1/2 cup chunky salsa
- 1 teaspoon salt
Instructions
- 1. In a large skillet over medium-high heat, sauté onion in olive oil until onions are translucent.
- 2. Add rice to skillet sauté for 3 minutes.
- 3. Add Rotel, chicken broth, salsa and salt. Bring to a boil.
- 4. Cover and reduce heat to medium low.
- 5. Simmer on low for 20 minutes (stirring half way through).
- 6. Remove from heat. Fluff with fork and enjoy!
