Cheesy Hash Brown Patties
Cheesy Hash Brown Patties are perfect for breakfast and brunch! These crispy, cheesy rounds taste homemade but they are easy to make thanks to a special shortcut!
There’s a little breakfast joint down the street that serves the BEST cheesy hash brown patties. They are crispy, crunchy and cheesy all in one bite. Unfortunately, the restaurant is closed on Sundays… You know when I want hash browns? Sundays. Thus, I created this recipe so I could have my hash brown fix at home.
The problem with homemade hash browns is that its SO much work. You have to peel and shred potatoes before you even get to the good part. I used a shortcut in this recipe because well, I’m a little lazy in the morning and I bet most of you all feel the same.
The recipe calls for pre-shredded hash browns making this breakfast side super easy to prepare. The the potatoes are cut and seasoned for you so all you need to add is mozzarella cheese, onion, flour and eggs. Once your mixture combined, you will make patties (about 1/2 cup) and fry them in a skillet or non-stick frying pan. The whole process takes about 30 minutes – just long enough to work up an appetite.
*The recipe calls for frying in vegetable oil but coconut oil works just as well.
I serve these hash brown patties with eggs and bacon. Oh, and don’t forget the ketchup and maple syrup. Am I the only one who eats hash browns with syrup? Of course, you can always get a little crazy and serve them with dinner – maybe with ham and collard greens. *sigh* I think I know what were having for Sunday supper now 😉

Ingredients
- 1- 20 ounce package of shredded hash browns
- 2 large eggs
- 1/3 cup all purpose flour
- 1/2 cup yellow onion (finely diced)
- 1 cup shredded mozzarella cheese
- 4 tablespoons vegetable oil (more as needed)
Instructions
- 1. In a large bowl, combine shredded potatoes, flour, eggs, cheese and onion.
- 2. Add oil to large frying pan or skillet and bring to medium heat. There should be enough oil to cover the bottom of the pan.
- 3. Using a 1/2 cup measuring cup, scoop potato mixture. Press down to create a patty.
- 4. Add 3 patties to pan. Fry for 3 to 4 minutes on each side or until crust is golden brown.
- 5. Remove patties from pan and place on a paper towel lined plate. This will allow some of the grease to drain off.
- 6. Salt to taste.
- 7. Repeat steps 3-6 as needed. You may need to add more oil to the pan.
- 8. Serve with ketchup and/or maple syrup.
