For the last several months, I have been experimenting with overnight oats. I am not a HUGE oatmeal fan but I had to see what all the fuss was about. Plus, I’m always looking for quick breakfasts to grab on my way out to work each morning.
“Overnight Oats” is a method for preparing oatmeal where you allow the oats to “steep” [or soak] in the refrigerator overnight. They can be mixed with yogurt, milk or cream. In the morning, the oats are perfectly tender and ready to enjoy within seconds. Sounds easy, right?
Easy. Hearty. Healthy. Oats.
After testing several iterations of this recipe, I’ve settled on the perfect combination of creamy and sweet. My recipe for overnight oats is so rich and hearty that it keeps me full until lunchtime, which is perfect because I am trying to do less snacking throughout the day.
The base recipe for these overnight oats is super simple [oats, almond milk and yogurt] and it will pair well with any toppings you have on hand. I have included a few recommendations in the recipe below for pecan pie, pumpkin pie, apple pie and oatmeal cookie flavors. Because, you know, it’s finally Fall in Florida and pumpkin. is. everything. But, you can top these oats with any fruit, nuts or sweeteners you please.
Overnight Oats are Perfect for Meal Prep
These oats keep in the refrigerator for up to seven days so feel free to prepare in batches. Sometimes, on Sunday nights I prepare 3-4 containers to last throughout the week. In the morning, I stir in my favorite toppings [oatmeal cookie is my jam] and microwave for 60-90 seconds. This recipe can be eaten cold or hot – it just depends on how you like it. Lately, it’s chilly out in the mornings so I like a big warm bowl of oats.

Fall Inspired Overnight Oats Four Ways
Ingredients
- ½ cup old-fashioned oats
- ½ cup unsweetened vanilla almond milk
- ¼ cup low-fat vanilla yogurt
For Pecan Pie
- 1 tablespoon maple syrup
- 2 tablespoons chopped pecans
For Apple Pie
- ¼ cup diced apple
- 1/8 teaspoon ground cinnamon
- Optional: 1 tablespoon of raisins
For Pumpkin Pie
- 2 tablespoons pumpkin puree
- 1/8 teaspoon pumpkin pie spice
For Oatmeal Cookie
- 1 tablespoon brown sugar
- 1 tablespoon mini semi-sweet chocolate chips
Instructions
- 1. In a mason jar or small Tupperware dish, combine oats, almond milk and yogurt.
- 2. Place oatmeal mixture in the refrigerator overnight or for at least 6 hours.
- 3. In the morning, stir in preferred toppings.
- 4. Enjoy cold or microwave for 60-90 seconds.
