No-Bake Pumpkin Spice Snack Bites
No-Bake Pumpkin Spice Snack Bites are a healthy grab-and-go breakfast or snack that is chalk full of fiber, whole grains and your favorite fall flavors.
It’s still in the upper 80’s here in Florida so you won’t find me ordering a pumpkin spice latte or baking up my favorite fall desserts. To be honest, I’m starting to feel a little left out of the festivities. Thus, I am sharing my recipe for these No-bake Pumpkin Spice Snack Bites.
These bite sized snacks pack a giant fall flavored punch! They’re spicy, nutty and not too sweet, which makes them perfect for mornings when you’re rushed for breakfast. On the other hand, they pair perfectly with a cup of coffee for a little afternoon pick-me-up.
The best part of this recipe is that it doesn’t require you to stand in the kitchen and slave over a hot stove. All the Floridians shout “AMEN!” The snack bites take about 10 minutes to prepare and one hour in the fridge. It’s that easy! Also, since you’re not baking them, measurements don’t have to be exact; throw in anything you fancy into that food processor, friends.
Once this mixture is rolled into perfectly formed balls, I like to roll them in a combination of chia seeds and unsweetened coconut flakes. The organic unsweetened coconut flakes I used are HIDEOUS so that’s why these pictures look a little freaky. But hey, it’s almost Halloween. 😉
One final note. I am not a nutritionist or a health food junkie – if you read my blog on the reg, you already know this. When I say that these snack bites are healthy, in my eyes, they are. I believe life is all about balance, moderation and good ingredients. You put good in, you get good out.

No-Bake Pumpkin Spice Snack Bites
Ingredients
- 1 cup of pitted dried dates
- ¼ cup pumpkin puree
- ¼ cup pecan halves
- ¾ cup quick oats
- ¼ cup unsweetened coconut flakes
- 1 tablespoon + 2 teaspoons agave nectar (or maple syrup)
- 2 teaspoons vanilla
- ¼ teaspoon pumpkin pie spice
- Pinch of salt
Instructions
- 1. Cover dried dates with water and soak for 8-10 minutes. Drain.
- 2. In a food processor, pulse dates until small pieces remain. Mixture will be sticky.
- 3. To the food processor, add pumpkin, pecans, oats, coconut and 1 tablespoon of agave nectar. Pulse to combine. You want all the little pieces to be uniform. Add additional agave nectar to desired sweetness.
- 4. Cover mixture and place in the fridge for one hour. If necessary, you may need to transfer the mixture into a small bowl.
- 5. Once it has chilled, scoop the mixture into small balls using a small ice cream scoop or tablespoon. Using your palms, roll mixture into uniform balls.
- 6. Optional: Roll each ball in chopped pecans, chia seeds, coconut flakes or flax seed.
- 7. Refrigerate for up to a week or freeze for up to a month.
