Is there any dessert more heartwarming than pie? Perhaps the buttery, flaky marriage of a crumble pie? Add sweet berries and a scoop of ice cream and call it comatose. Go ahead and get your recipe cards out because you’re going to want to get this one down.
Using a Prepared Crust
If you’re a follower, you know I’m not a real bake-from-scratch kind of gal. I am always limited on time, especially now that I have a little one. That’s why I love a good shortcut like boxed cake mix, no-bake desserts and, in this case, refrigerated pie crust. There’s no shame in the game! Using a prepared dough cuts prep time down by at least half making this recipe a 45 minute miracle. You can certainly use your favorite crust recipe if you prefer to make your own. Mixed Berry Filling
Another thing that makes this recipe so easy is that you don’t have to pre-cook the mixed berry filling. Just toss your favorite berries in sugar, cornstarch and a splash of orange juice before layering them into the crust. They will cook completely during the baking process. I like to use whole blueberries and diced strawberries but you can use any berry you like. Just make sure you cut all the fruit to about the same size for consistency.
That. Crumble. Though.
Although I suggest a pre-made crust, there’s no shortcut for this buttery, melt-in-your-mouth crumble. But, it’s super simple. Cut butter into flour, sugar and oats until crumbs form. “Cutting” butter into a flour mixture means to incorporate it so that lumps of butter remain whole without melting. You can do this with a pastry cutter or with two forks. Essentially, you want a consistency that is easy to crumble over the top of the berry filling. Note that you can omit the oats if you’d like.. they’re mostly for texture!

Notes
Store any leftovers in the refrigerator for up to 4 days. To reheat, microwave single slices for 60-90 seconds.
Ingredients
- 1 prepared pie crust (refrigerated dough or using your favorite recipe)
Filling:
- 3.5 cups berries (I prefer blueberries and diced strawberries)
- 1/3 cup sugar
- 1/4 cup corn starch
- Juice of 1/2 naval orange (about 2 tablespoons)
Crumble:
- 1 cup salted butter (2 sticks)
- 1 cup sugar
- 1 cup flour
- 1/2 cup oats
Instructions
- 1. Preheat oven to 375 degrees.
- 2. Arrange prepared pie crust in a standard 9 inch pie pan. Pinch down edges. 2.
- 2. In a medium bowl, toss berries in sugar, corn starch and orange juice. Set aside.
- 3 In separate bowl, cut butter into sugar, flour, and oats until crumbs form. (if you do not have a pastry blender, use a fork)
- 4. Assemble pie by first layering the berry mixture evenly into crust. Then, sprinkle crumble over the top.
- 6. Bake for 30-35 minutes or until crumble is golden brown.
- 7. Serve warm with a scoop of vanilla ice cream and enjoy!
